OUR PRODUCTS
We offer a varied range of charcuterie products, processed ourselves using meat from home-reared pigs, such as prosciutto, roast ham, salami, ossocollo (flavoured and cured pork neck), ombolo (smoked pork loin), and three different types of pancetta (bacon – peppered, rolled with peppers and roasted). There are also pickles in oil or vinegar – all home-produced – and sausages baked in a bread dough crust which are another product much appreciated by our visitors. All these are available to eat, ready to be tasted whenever we are open to the public, as publicised from time to time through our mailing list and on our Facebook page. New this year are our savoury strudels, in two varieties: ham and cheese or vegetarian. As far as desserts are concerned, availability varies according to the season. Popular ones, to name just a few, include ricotta or apple cake, crêpes with various home-made jams, crème caramel and Terrano wine sorbet. Our range consists entirely of simple, genuine products.
The best way to taste them is together with a good glass of Terrano wine, the quintessential product of the Karst. It is ruby red in colour with purplish highlights, full-bodied and slightly acidulous in flavour, with an aroma reminiscent of red fruits. Alternatively you can sip an Istrian Malvasia, straw-yellow in colour with golden highlights, while tanginess is evident on the palate and there are recognisable hints of ripe fruit and spices on the nose. Yet again you might opt for Vitovska, which until a few years ago was mainly used in blending but nowadays is also used on its own as a varietal. Its flavour is slightly acidulous and the bouquet reminiscent of Williams pears.
